Don't Chalk It Up to the Roast: Your Water Is Ruining Your Brew

You blame the beans for bitter coffee, but it's your tap water. Here's the fix: matching mineral content to your brew method, with hard numbers.

Every coffee geek I know has a ritual: they weigh the beans, dial in the grind, obsess over water temperature, and then—without a second thought—pour in tap water straight from the sink. I call this the 'tap water paradox.' We fuss over everything except the one ingredient that makes up 98% of the cup. And that's why most home coffee tastes 'off' no matter how fancy your grinder is. It's not the beans, not the roast, not even your technique. It's the water.

Before you dismiss this as another pseudoscientific rant, hear me out. The Specialty Coffee Association (SCA) has actually published water standards for brewing: odor-free, colorless water with a pH between 6 and 8, and total hardness between 40 and 175 parts per million (SCA). If you're on municipal tap water that's hard or soft, you might be outside that window, and your coffee is paying the price. The fix isn't to buy a $50 filter—it's to understand what your water needs and adjust it, just like you adjust your grind size for a new bag of beans.

Does my tap water really make a difference?

Yes, and I'm not talking about subtle nuance. Water chemistry directly affects extraction. The SCA's Golden Cup standard targets a brew strength of 1.15–1.35% total dissolved solids (TDS) and an extraction yield of 18–22% (SCA). If your water lacks the right minerals, you'll under-extract and get sour, weak coffee. If it's overloaded with minerals, you'll over-extract and get bitter, harsh flavors. The SCA even recommends specific contact times for different grind sizes—1–4 minutes for fine grind, 4–6 for medium, 6–8 for coarse (SCA)—but if your water is off, those timings won't save you. I've brewed the same beans with bottled spring water and my city tap, and the difference is night and day: the spring water cup was brighter and sweeter; the tap cup was flat and chalky.

Is the 'golden ratio' actually golden?

You've heard the mantra: 1:16 coffee to water. It's a good starting point, but it's not a law. The SCA's official Golden Cup ratio is 55 grams of coffee per liter of water, with a ±10% tolerance—that's roughly 1:16 to 1:18 by weight (SCA). But many pros brew stronger, at 1:15 to 1:17 (SCA). So why the discrepancy? Because the 'right' ratio depends on your water, your grind, and your taste. If you're using water that's perfectly within SCA specs, 1:16 is a safe bet. But if your water is hard, you might need to go coarser or brew stronger to compensate. Don't be a slave to a number—be a slave to your palate.

Does the roast level affect caffeine content?

Here's a myth that refuses to die: dark roast has more caffeine because it's 'stronger' in flavor. In reality, caffeine is heat-stable and doesn't burn off during roasting; light roast has slightly more caffeine by weight, but the difference in a brewed cup is typically less than 5% (Roast Coffee Co. roast levels). So if you're choosing a dark roast for a caffeine kick, you're fooling yourself. What changes with roast level is flavor, not caffeine. Is espresso the most caffeine-dense brew?

Another myth: espresso has more caffeine than drip coffee because it's intense. Actually, a 12-ounce cup of brewed coffee contains about 113–247 mg of caffeine (NCA caffeine), while a single espresso shot is only 1 fluid ounce (30 mL ± 5 mL) per World Barista Championship rules (WBC Rules). A single shot typically has around 63 mg of caffeine—so a 12-ounce drip has more total caffeine than a single shot. The difference is concentration: espresso is more caffeine per ounce, but you drink less of it. So if you're chasing caffeine, a large drip will beat a single shot every time. But if you want a quick hit without the volume, espresso wins.

What I'd actually do

Stop blaming your beans and start fixing your water. Here's my concrete plan: First, get your water tested—you can buy a cheap TDS meter or check your municipal water report. If your hardness is above 175 ppm, dilute your tap water with distilled water (yes, really) to bring it into the SCA's 40–175 ppm range (SCA). If it's below 40 ppm, add a pinch of magnesium sulfate (Epsom salt) or a commercial mineral packet. Second, use the SCA ratio as a starting point: 55 g coffee per liter (SCA), but adjust to taste. I brew at 1:15 for most pour overs, because I like a stronger cup. Third, match your grind to your method using the grind size chart: extra-coarse for cold brew, coarse for French press, medium for drip, medium-fine for V60, fine for moka pot, extra-fine for espresso (Roast Coffee Co. grind size). And finally, grind fresh—pre-ground coffee starts going stale within 15–30 minutes of grinding (Roast Coffee Co. grind size). It's not a lifestyle, it's just better coffee.
