How to Review Coffee Like a Pro: A Practical Walkthrough

You buy a bag of coffee, brew it, and think "this is good"—but you can't say why. You want to taste the difference between a light roast from Ethiopia and a dark roast from Brazil, and you want to know if you're getting ripped off paying $20 for a 12-ounce bag. This is for the home brewer who wants a repeatable, honest way to judge coffee, not just drink it. I'm going to show you how to run a coffee review like the pros do—using the Specialty Coffee Association's (SCA) cupping protocol as a backbone, but adapted for your kitchen.

Step 1: Set Up Your Cupping Station

First, you need a clean, neutral setup. The SCA's cupping protocol calls for 8.25 grams of coffee per 150 milliliters of water, with water that has a total dissolved solids (TDS) of 125–175 ppm (PyraBrew). That's about a 1:18 ratio. You don't need a lab-grade TDS meter—any filtered water under 200 ppm works. Grind your coffee slightly coarser than drip, just like the pros do (PyraBrew). Use a white cup or bowl so you can see the color of the brew. And here's the critical part: don't use your fancy pour-over setup. You're cupping, not brewing. You want the coffee to steep in the water, then break the crust and skim off the grounds. That's the standard.

Step 2: Smell the Dry and Wet Aromas

Before you add water, smell the dry grounds. Then pour water heated to about 200°F (93°C) directly over them (SCA). Wait four minutes, then break the crust that forms on top by stirring with a spoon, and stick your nose in there. This is where you pick up the floral, fruity, or nutty notes that define the coffee's character. For example, a light roast from Ethiopia might smell like jasmine or blueberry, while a dark roast from Brazil might smell like dark chocolate or smoke. Write down what you smell. Don't judge yet—just observe. The Maillard reaction during roasting creates hundreds of aromatic compounds, so there's a lot to take in (ECF).

Step 3: Taste It Like a Cupper

After breaking the crust, wait another few minutes to let the grounds settle. Then take a spoon, scoop up some liquid, and slurp it loudly. Yes, slurping is correct—it aerates the coffee and spreads it across your palate. Evaluate acidity (brightness), sweetness, body, and flavor. The SCA scores on a 100-point scale, with 80+ being specialty grade (Roast Coffee Co.). But you don't need to assign a number unless you want to. Instead, ask yourself: Is it balanced? Is there a dominant note? Does the aftertaste linger pleasantly or turn bitter? The SCA's Golden Cup target for extraction is 18–22% of the dry coffee mass dissolved into the water (SCA). If your brew tastes sour, you're under-extracting; if it's bitter, you're over-extracting. That's a clue about your grind size or brew time.

Step 4: Check the Roast Level

Roast level dramatically changes flavor. Light roasts (stopped at or just after first crack, around 196–205°C) are bright, fruity, and high in acidity (Roast Magazine). Medium roasts (210–220°C) are balanced, nutty, and caramel-like. Dark roasts (240–250°C) are bold, smoky, and low in acidity. Look at the beans: light roasts are light brown with a dry surface, dark roasts are shiny with oil on the surface (Roast Magazine). If you're reviewing a bag, note the roast level on the label and whether it matches what you taste. For example, a "French roast" should be dark and oily—if it looks dry and pale, it's mislabeled.

Step 5: Rate the Body and Finish

Body is the weight or thickness of the coffee in your mouth. You can feel it—does it feel like water or like whole milk? The SCA's cupping scores body, but you can describe it simply as light, medium, or heavy. The finish is the aftertaste. A good finish is clean and pleasant, not harsh or astringent. One thing to watch: if you're using a paper filter, you'll get a cleaner cup but less body than a French press or espresso. That's not a flaw—it's a choice. But if you're reviewing a coffee, note the method you used, because it affects the score.

What Can Go Wrong

The biggest mistake is using stale coffee. Pre-ground coffee starts going stale within 15–30 minutes of grinding, because the exposed surface area oxidizes faster (Roast Coffee Co.). So grind right before you cup. Another mistake is using water with too much mineral content—hard water can dull the acidity and make everything taste flat. The SCA recommends a TDS of 150 mg/L, acceptable range 75–250 mg/L (SCA Water Standard). If your tap water is heavily chlorinated, use filtered. And don't compare coffees at different temperatures—cooling changes the flavor dramatically. Taste each coffee at the same temperature, or you'll get inconsistent results.

What I'd Actually Do

For a home review, I'd skip the formal 100-point scoring and instead do a side-by-side cupping of two coffees from different regions, using the SCA's 8.25g/150ml ratio. I'd set up two cups, grind both to the same size, and taste them blind. I'd write down three observations for each: aroma, acidity, and finish. Then I'd decide which one I'd buy again. That's the practical test—does it make me want another cup? If you want to get more technical, you can measure your extraction yield with a refractometer, but that's overkill. The SCA's Golden Cup standard of 55g per liter is a good baseline for drip brewing, but for cupping, stick to the 1:18 ratio. And if you're buying specialty coffee, remember that roasters pay 2–5x commodity price for quality (Roast Coffee Co.). So if a bag costs $20, you should taste the difference. If you don't, try a different roaster.
