Imagine you’re a home roaster, and your first batch of green beans is tumbling in the drum. The temperature is climbing, and you’re watching the bean color shift from pale green to yellow to tan. You’ve read about first crack, but you’re not sure what you’re listening for. When it happens, it sounds like popcorn popping, and the beans suddenly smell like bread. That’s your signal.
First crack is the line between green coffee and something you can actually drink. According to Roast Magazine, it happens around 196–205°C (385–401°F). That’s the moment the bean’s internal structure breaks, and the coffee becomes light roast territory. Stop there, and you get a bright, fruity cup with high acidity and a dry surface. Many roasters call this “Cinnamon” or “New England” roast, and it’s a favorite for those who love a lively, tea-like cup.
Start with the bean, not the machine
Before you even turn on the roaster, you need to know what you’re aiming for. The roast level you choose changes the flavor more than any other variable. Light roasts preserve the origin character—think berries, citrus, floral notes. Dark roasts are bold, smoky, and low in acidity, with a shiny, oily surface. Medium roasts sit in the middle: balanced, nutty, with a hint of caramel.
If you’re new to roasting, I’d recommend starting with a medium roast. Why? Because it’s forgiving. The window for medium roast—210–220°C (410–428°F)—is between first and second crack, and you have more time to react. You can stop the roast a few seconds early or late and still get a drinkable cup. With light roasts, you’re riding the edge of first crack, and with dark roasts, you’re flirting with the dreaded “burnt” flavor.
Listen for the cracks
The single most important skill in roasting is listening. First crack is your cue for light roast. Second crack—around 224–230°C (435–450°F)—is your cue for medium-dark and dark roasts. Second crack sounds like rice Krispies, and once it starts, the roast accelerates quickly. If you want a medium-dark roast, you’ll stop somewhere in the middle of second crack, around 225–230°C (437–446°F). If you want a full dark roast, you’ll push to 240–250°C (464–482°F), where the beans get shiny with oil and the smoke alarm might go off.
Here’s the key: don’t rely solely on temperature. You can’t always trust the bean probe, especially in a small home roaster. The cracks are your ears’ way of telling you what’s happening inside the bean. Temperature matters, but it’s a guide, not gospel.
Match the roast to your brew
Once you’ve roasted your beans, you need to brew them right. The Specialty Coffee Association’s Golden Cup standard recommends 55 grams of coffee per liter of water, with a tolerance of ±10% (so roughly 50–60 g/L). That works out to a ratio of about 1:16 to 1:18 by weight. For a stronger cup, you can go 1:15 to 1:17.
But here’s the thing: roast level affects extraction. Dark roasts are more soluble, so they extract faster. If you use a fine grind with a dark roast, you might over-extract and get bitter flavors. For a dark roast, I’d use a coarser grind and a shorter contact time. The SCA recommends 1–4 minutes for fine grind (pour over), 4–6 minutes for medium grind (drip), and 6–8 minutes for coarse grind (French press). Adjust based on your roast.
Water matters more than you think
You can have the perfect roast and the perfect grind, but if your water is off, you’ll ruin the cup. The SCA’s water guidelines call for water that’s odor- and color-free, with a pH between 6 and 8 and total hardness between 40 and 175 ppm. If your tap water is too hard or too soft, the coffee will taste flat or harsh. A simple filter often does the trick.
Temperature is another variable. The SCA recommends water at about 200°F ± 5°F (roughly 93°C ± 3°C) at the point of contact with the coffee. For light roasts, you might want to go a bit hotter to extract more flavor, but stay within that range. For dark roasts, a slightly cooler temperature can prevent bitterness.
A practical field test
Let’s put this into practice. Say you’ve roasted a batch to medium-dark, stopping at 228°C (442°F) about 30 seconds into second crack. You’ve rested the beans for a few days, and now you’re ready to brew. You decide on a pour over with a medium grind. You weigh out 55 grams of coffee and add 1 liter of water at 200°F. The contact time will be around 3 minutes—within the 1–4 minute range for fine grind, but you’re using a medium grind, so you might go a bit longer, maybe 4 minutes. The result should have a TDS between 1.15 and 1.35% and an extraction yield between 18 and 22%, per the SCA Golden Cup targets.
If it tastes too strong, add a little more water. If it tastes weak, grind finer or increase the dose. The numbers are a starting point, not a rulebook.
Don’t forget the milk
If you’re a latte drinker, you might think roasting guides don’t apply. But they do. A dark roast like French or Italian is often marketed as “espresso,” and it’s designed to cut through milk. When you pull a shot, you’re brewing espresso—a concentrated coffee made by forcing hot water through finely ground coffee under pressure. Then you pour steamed milk with microfoam to create latte art. The roast level affects the crema and the flavor balance.
For milk drinks, I’d recommend a medium-dark to dark roast. The bold, smoky flavors hold up against milk, and the low acidity is a plus. Light roasts tend to get lost in a latte. So if you’re roasting for lattes, aim for the second crack range.
