Once your crema is right and your milk is silky, the pour is simple. You tilt the cup, pour from a height to break through the crema, then lower the pitcher to draw the pattern. The two main methods are free pouring — forming the pattern directly during the pour — and etching, which is drawing on the surface after pouring (Coffee terminology). Free pouring is harder but yields cleaner lines. Etching is more forgiving but can look muddy if your crema is thin.
